Follow the Line of Locals: This is your most important rule. If a street stall or tiny eatery has a long line of local people, that's your safety and quality assurance. High turnover means incredibly fresh ingredients.
Avoid the Multi-Language Menus: If a restaurant has a host pulling you in off the street, and the menu is plastered in five languages with glossy food pictures, it's a waste of your money.
